At our restaurant, we express the beauty of the seasons in our course meals, allowing our guests to enjoy the unique flavors of the season.
SAKE Pairing
Sake, made from rice, water, and rice koji, is a remarkably complex beverage. Its flavor, aroma, texture, and color emerge through layered processes, creating a depth that continues to evolve with the vessel, temperature, and aging. Sake pairs not only with Japanese cuisine but also creates unexpected, delightful combinations with diverse dishes.
Non-alcoholic pairing
Our non-alcoholic pairings feature drinks made with teas, herbs, fruits, vegetables, broths, spices, and fermented ingredients. Some are unique creations developed for a single dish. Discover pairing possibilities beyond alcohol.

日本酒ペアリング
米と水と米糀から作られる日本酒は、幾重にも重ねられ繋いでいく工程を経て、味わいも香りもテクスチャーも色も、計り知れないほどの多様で複雑な個性をもつアルコール飲料です。その複雑な個性は、提供する器や温度、熟成などに気を配ることでさらに変化し、日本の料理だけにとどまらず、さまざまな料理とも思わぬコンビネーションを実現させ、私たちを驚き、喜ばせてくれます。
ノンアルコールペアリング
ノンアルコールペアリングでは、世界各国の茶葉やハーブ、様々なフルーツや野菜やその出汁、発酵飲料やスパイスを活用したドリンクをご用意します。その一皿のために開発された、唯一無二のお飲み物もあります。アルコールとはまた別の、ペアリングの可能性をお感じください。
なお、事前の準備が必要となるため、当日のノンアルコールペアリングのご要望には対応できないこともございます。
